Oh that will remain in the waffle frolic vault forever. I’ll give you a hint. It has hot sauce and real maple syrup in it.
Ever had our homemade lemon curd on top of a waffle? It’s truly incredible. We love it so much we’re giving away our not-so-secret recipe in this step by step guide so you can make lemon curd too! This might make more than you want, so feel free to scale down the recipe if necessary.
Step 1: Gather all of your ingredients

Step 2: Separate your egg yolks from egg whites like so. You only need the yolks, so toss the whites or make some scrambled eggs and add the yolks on top of your 1 cup of sugar.


Step 3: Sprinkle the 1 tbs lemon zest on top of your yolks and sugar and start mixing


Mix, mix, mix

Step 4: Add your 1/3 cup of lemon juice

So refreshing…

Step 5: Get a medium size pot and fill it about half way with water. Put it on high heat until it boils


Step 6: While you’re waiting for the water to boil, weigh or measure out 4oz. of salted butter. Cut it into little squares to ensure even melting.


Step 7: Once your water has started to boil, place your yolk/sugar/zest/juice mixture on top of the pot to create a double boiler

Set a timer for 8 minutes and don’t stop stirring until the timer goes off

Step 8: Remove bowl from the double boiler and add your butter. Mix together as it melts. Remember to use a pot holder! This is very hot!

Mix until the butter has fully melted

Ta-da!

Step 9: Let your lemon curd cool and the rest is up to you! Remember, it will stiffen up once it cools off, making your lemon curd the perfect texture. Spread it on waffles, toast, or ice cream. Eat it straight-up if you’d like!

We are so thankful for this thoughtful donation. We would like to remind everyone that while we are keeping these games on the Book Exchange shelf, these are NOT, I repeat NOT up for grabs. Some of the games are hidden away in the office so if you’re looking for one in particular, feel free to ask a staff member. We hope they remain in the great condition they came in, so they can be enjoyed by future generations. If you, too, are trying to lessen your load and are about to rid yourself of any board games, we will gladly take them off your hands.
Speaking of the Book Exchange, we are always accepting book donations — this includes magazines, children’s books, and text books. We would also like to remind the literature lovers who come to our shelf, to leave a book before taking a book. We know the sign is small, but please pay it forward.
